Chinese Immigrants.—It is said, and with truth, that the Chinese immigrants in San Francisco, now numbering some three or four hundred, are among the most industrious and temperate people in the city. It might also be said with equal truth, that they are among the most civil and polite. They are very ingenious, and are engaged in every branch of business. Many of them adhere to the peculiar customs and religious tenets of their race; yet the majority of them are rapidly conforming to the habits of their adopted country, by exchanging their robes and wooden shoes for articles of terrestrial manufacture, even cutting off their long tails and otherwise disguising their celestial origin, though it must be confessed that they make rather an awkward appearance, when inducted into hats, coats, pants and boots.

Their excellent cookery and generous viands have given great popularity to their hotels in California. In catering to the palates of their barbarian guests, however, they are careful to reserve for their own eating, those choice dishes of which every inhabitant of the Flowery Empire is extravagantly fond—such as dogs, cats, and rats served up in soups and steaks, a la mode, and in other peculiar epicurean forms.
