Such a Display Will Enlighten Americans as Well as Foreigners,
Indianapolis Corn Miller.
It has been suggested by a number of journals that a complete corn exhibit should be made at the world's fair—under the auspices of the Department of Agriculture, in which, as a principal feature, the plans inaugurated by Colonel Murphy abroad should be retained, and under his special direction. As great numbers of foreigners will be present, such an exhibition would have specific value as getting them better acquainted with the capacities of corn. But even in this country the majority of population have but slight conception of the variety of ways in which corn may be prepared for the table. The question of mixing corn-meal with wheat and other flour is generally an untried one, and if the American press would advocate the using by our bakers of one-half corn with their wheat flour, a popular and cheap loaf would be produced. So much of our tastes are a matter of pure habit that nothing except actual trial will change them, even when the change is manifestly for the better. It is just in such ways that the value of these great expositions lie. They make the world acquainted with the customs, habits and methods of every nation, and as corn is our most bulky agricultural product, and in its many ways has the strongest influence on our national economy, nothing should be left undone by the government in the way of widening its capacities and markets. Colonel Murphy by all means should be supported in his project for making a corn food exhibit at the coming world's fair.
