To a man who has gone in for the creation of unusual dishes with salads his specialty—and who has earned the title of gourmet, salad tossing is a serious but fascinating business.
If you have one such man in your family, you are extremely lucky, for you are probably having the experience of enjoying salads and dressings the like of which you have never had before.
Many times, the man with the leanings toward the culinary arts wants to create his own salads and dressings, such as the delicious green goodness dressing created by the executive of one of the big American paper companies.
Some men of less creative but just as capable talents are content to use recipes that have been created by others. For these men, we would like to suggest the "He-Man Potato Salad."

This salad is different from the usual calorie-packed potato salad. The potato is still used for heartiness, but other fresh vegetables are added to provide extra nutrients and bulk, but without high calorie content.
This salad should appeal to the man who is calorie-conscious for himself or his wife and guests. Mayonnaise may be used, but remember this: one tablespoon equals 100 calories.
Salads are usually low in calories but high in food value, and in warm weather, they can be the main dish of a luncheon or porch supper and include practically all the nutrients and vitamins needed.
They add variety to meals and can utilize all the in-season fruits and vegetables, and so, obviously, they are economical.
Many salads can be made a day ahead, such as the innumerable gelatin salads, and be all ready to serve with only a few last minute touches.
Unless you are the systematic type who keeps a schedule of salads for certain days, and a reserve list ready to turn to, it is easy to run out of salad ideas.
Men may stick to their specialties because usually they are quite different, but women who prepare meals day in and day out must have variety.
