CULINARY HINTS.
To make shirley sauce, which is like chili sauce, take six large ripe tomatoes, two medium-sized green peppers, one large or two small onions, one tablespoonful of salt, one and one-half or one cup of vinegar and two-thirds of a cup of sugar. Chop the peppers and onion fine. Peel the tomatoes and cut them into small pieces. Boil all together for an hour. Bottle and seal while hot. Increase these amounts three, four or five times according to the quantity desired if the family be a large one or fond of such relishes.
To make good chili sauce try this recipe: Forty-eight tomatoes, eight onions, six large green peppers, eight tablespoonfuls of salt, two tablespoonfuls of ground cinnamon, one tablespoonful of cloves and allspice mixed, two teacups or more of white sugar (or brown would answer), three pints of cider vinegar. Peel the tomatoes and onions. Reject the seeds of the green sweet peppers, not chili peppers, in spite of the name of sauce. Chop all these vegetables, add the vinegar, spices and sugar and boil slowly for three hours. Put in large bottles or glass jars and seal.
The pretty purple cabbage makes a pleasing relish if chopped fine and some hot spiced vinegar be poured over. This can be done at intervals, selecting small cabbages. It may accompany chopped meat on toast for luncheon.
