This is a menu for a children's party, luncheon or supper. The one man in a boat may be made with tuna fish instead of salmon, if you prefer.

FACTS AND FANCIES
De-Boning Herrings

Here is a way to de-bone herrings before cooking. Cut off heads and tails. Trim off the little fins at sides and on the back. Split open with a sharp knife. Take out roes. Place fish on the board opened side downward. With your clenched fist beat them out flat. Turn over and you will find that with a sharp knife to pry up the top of the backbone the rest of it will come away quite easily from the flesh if pulled up with the fingers, taking most of the little bones with It.

Cinnamon Cheese Sandwiches

Blend a package of cream cheese with two tablespoons brown sugar, one-fourth teaspoon cinnamon and three tablespoons chopped dates or raisins. Spread between buttered graham bread. Or use this combination as one layer for a striped sandwich made of two slices white bread and one of whole wheat, cut lengthwise of the loaf. Chopped nuts and finely-diced celery with mayonnaise makes a good second filling. Never use a sweet filling with a meat or fish filling, with the possible exception of ham.

Wife Preservers

All sorts of root vegetables keep better if a little dirt is allowed to cling to the roots, and if some of the top is left on.
