Of Meat

Fresh meat, a major cost item on the family food budget, should be handled with care at home.

But health, not money, is the prime consideration.

Food preservationist Lavada Curtis of Auburn, Ala., explained why it is a good idea to wipe off the meat and wrap it loosely in waxed paper as soon as the groceries are put down on the kitchen table. "The loose wrapping lets some air reach the surface of the meat, and the small dryness that takes place helps keep damaging bacteria under control."
