The ingredients for an easily prepared fruit cup that is a White House favorite,

Mrs. Roosevelt is so active
in fields that it is no surprise to learn
she is something of an authority on
dietetics. With this knowledge she
combines an appreciation of the art
of dining, of serving appetizing
foods in pleasant surroundings,
among congenial people. Her reputation in this field does not depend
upon the serving of elaborate or
unusual dishes, rather she concentrates upon the wholesome American
foods which promote good
health and are, moreover, available
to every housewife.

Fruits, rich in mineral salts and
vitamins necessary to good health,
are highly regarded at the White
House and appear on the menu in
many attractive forms, according
to Mrs. Henrietta Nesbit, the White
House housekeeper. In addition to
the nutritive value of the fruits
there is also to be considered the
high energy value of the sugar used
to sweeten them-a quality put to
good use as the abundant energy
displayed by the Roosevelt family
testifies.

Simple combinations are favored
for all but the most formal repasts.
An old fashioned, apple suet pudding is a White House favorite and
Mrs. Nesbit tells of another dish
much in demand at the White
House, which is merely the combination of equal parts of apples,
bananas and oranges finely diced,
a dash of lemon juice and a generous sprinkling of sugar. The
secret of this fruit cup lies in the
fact that it is chilled in the refrigerator for several hours before
serving. This permits a thorough
mellowing of the fruits, and the
sugar content is thoroughly absorbed.
