Valuable Family Recipes.

ORIGINAL AND SELECTED EXPRESSLY FOR THE MIRROR.

Roasting Meat.—Meat, roasted before the fire, is more savory than when baked in an oven, though baking goes generally under the same title. But few persons have conveniences in these days of cook-stoves, for roasting. It is a good plan to have a tin reflector or cover made, to set up-on the hearth of the stove, and having established a fine fire, to open the front of the stove, having the meat upon a dripping-pan before it. Or, if the stove-oven can be kept hot enough, leave one door partially open, so that the steam may pass off. The meat should be watched and turned, that all parts may be equally done, and basted occasionally with the drippings; if these are not sufficient, a little lard or butter should be used. The process should not be too rapid, or the outside will harden, preventing the inner portion from cooking. The waste in roasting is fifteen per cent.

Potatoes in Haste.—A very nice little dish of potatoes may be made in five minutes, or less if the water is boiling; peel and cut some potatoes in slices, a quarter or half an inch thick; pour on them boiling water enough to cover them, and let them boil till tender; skim them; then add butter with flour, worked in proportion to the quantity of potatoes; let it boil up once, add a little chopped parsley, and serve, with the addition of pepper to taste.

Lemon Pie.—Beat with yolks of four eggs, two teaspoonfuls of melted butter, four of white sugar, the juice and grated rind of two lemons. Put into a rich paste and bake. Then beat the whites to a froth, adding two teaspoonfuls of powdered sugar; spread on the pies when done; put them in the oven and bake again for three minutes. The above is for two pies.

Beef Pie—Make a nice crust a little richer than for biscuit; chop up pieces of the boiled round of beef, when you have them cold; season with salt, pepper and butter, and onions if you like; line a basin with crust, rolled about half an inch thick; fill with the beef moistened with gravy or water; dredge in a little flour: cover bakes half an hour.

Oil for the Hair.—Oil of hen, one pint; civet three grains; Italian oil of jasmin, three fluid ounces; ottar of roses, three minims; if ottar of roses is not to be had 10 or 12 minims of common oil may be substituted. This oil strengthens and improves the hair, makes it curl, and gives it a beautiful gloss.
