It's Jellied Cherry-Mincemeat—a beautiful, tasty dessert that's so-o-o easy to make. You just mold mincemeat (the packaged variety) in cherry-flavored gelatin. You'll love the rich, yet refreshing, combination of flavors: the deep red color of the gelatin set off by an appealing garnish of whipped cream balls topped with maraschino cherries and mint leaves. This is a real holiday dessert—no matter when you serve it!

Jellied Cherry Mincemeat

2 packages cherry-flavored gelatin
1 (9-ounce) package mincemeat
1 cup broken nut meats
3/4 cup hot water

Dissolve gelatin in hot water. Pour 1/2 cup of the mixture into a 1-quart mold. Chill until firm. Chill remaining gelatin until slightly thickened. Fold in prepared mincemeat and nut meats. Turn into mold over firm gelatin. Chill until firm. Unmold. Garnish with sweetened whipped cream, maraschino cherries and mint leaves. Makes 10 to 12 servings.
