These bright and up-and-coming kids could teach us a lot if we would but listen.
In our own part of the state we have 4-H boys and girls who have earned scholarships, trips, awards and other honors in their beef-raising projects. They are learning young the value of beef, both as food and the use of the by-products.
I doubt is there is anyone in this particular region who has not eaten some of the 4-H beef and enjoyed the extra juiciness, flavor and tenderness of it. In some of the larger cities we find eating places that serve only 4-H beef. A good example is Carl's Chop-House in Detroit. They specialize in fine meats for their discriminating and critical clientele.
Recently a young seventh grade Colorado boy won first place honors in an essay contest on beef. It is a great work, showing a great deal of research had been done and pointing out little known facts about the beef industry. Future CowBelle columns will carry some of the interesting highlights to be found in this very informative essay. He closes his article, saying: 'The men who raise cattle, the men who buy cattle, and the men who slaughter and process cattle, help keep America alive, healthy and prosperous. Beef - we eat it, we wear it, and we use it.'
