Tucked Turkey Tips

Did you know that you need never truss a turkey again? That's right, the very finest plump, juicy frozen turkeys are marketed with the drumsticks tucked into a slit of skin at the base of the body cavity. The drumsticks can be slipped quickly out and into the tuck to accommodate the stuffing.
If the stuffing is to be made from your own favorite recipe you will buy a turkey that is ready-to-stuff. After thawing the turkey, slip the drumsticks out of the tuck. Remove the neck which is packed inside the body cavity and fill the turkey loosely with stuffing. Place the drumsticks into the tuck once more and the bird is ready for the oven.
Did you know that you need not bother with making stuffing when preparing turkey? How handy it is to buy the frozen turkey that is already-stuffed with a tasty old-fashioned bread stuffing.
The frozen stuffed turkey may go into the oven without pre-thawing. Or many homemakers store the bird in the refrigerator overnight before roasting to cut the roasting time. Yield: 1 1/2 cups
1 cup diced roasted turkey
1 cup mayonnaise
1 hard cooked egg chopped
1 tablespoon lemon juice
1/2 cup chopped roasted unblanched almonds

Combine ingredients with fork mixing until well blended. Serve as sandwich filling, salad or roasted spread.
