EFFICIENT HOUSEKEEPING

HOT BREADS FOR LUNCH OR SUPPER.

Perhaps nothing tastes so delicious on a crisp winter night as some kind of hot bread.

Try some of the following:

Minced Lamb on Toast
Cocoa
Pinwheel Fruit Biscuit
Apple Betty
Hard Sauce

Pinwheel Fruit Biscuits: Mix together 2 cups of flour, 4 teaspoons of baking powder, 1/3 teaspoon of ground cinnamon, 2 tablespoons of crushed maple sugar and 1/2 teaspoon of salt. Work into this mixture, with the finger-tips, 2 tablespoons of lard and butter mixed, and stir in 1/3 cup of sultana raisins and 2 teaspoons of shredded citron. Wet this mixture to a dough by adding 2/3 of a cup of sweet milk, then roll it out into a thin sheet and cut it in strips a little over an inch wide. Roll up each of these strips like a tiny jelly-roll and lay it on its side on a large buttered pan. Brush over all these small rolls with 3 tablespoons of sweet milk in which 1 teaspoon of crushed maple sugar has been dissolved. Bake in a quick oven.

Southern Rice Bread: Put 2 cups of boiled rice in a mixing bowl and add to it 2 cups of sweet milk, 2 beaten eggs, 1/2 teaspoon salt, 2 tablespoons of melted butter and enough flour, sifted with 3 teaspoons of baking powder, to form a fairly stiff batter. Turn this mixture into a buttered shallow pan and bake for 30 minutes in a hot oven.

Cocoa Muffins:

Dissolve 3 tablespoons of cocoa in 1/2 cup of boiling milk and let cool. Now mix together 1 1/4 cups of flour, 1/4 teaspoon of salt and 2 scant teaspoons of baking powder. Cream together 1/2 cup of granulated sugar and 2 tablespoons of butter and add to the butter and sugar the beaten yolks of 2 eggs; then add the cocoa mixture, and then the dry ingredients. Last fold in the stiffly-beaten whites of the two eggs. Bake in well greased muffin tins for 25 minutes in a moderate oven. They are fine.

Here is a recipe for Raised Potato Rolls: Mix together 4 small cooked potatoes that have been mashed and add 2 tablespoons of melted butter, 1 cup of scalded milk, lukewarm, 1/2 teaspoon of salt, 1 tablespoon of sugar, 1/2 yeast cake which has been dissolved in 1/4 cup of tepid water, and flour enough to make a very stiff batter. Let it rise overnight in the bowl, and in the morning add additional flour to make a soft dough. Knead well, roll out on a floured board into a thin sheet, and cut into discs with a cookie cutter. Lay these discs in a greased pan, brush over with melted butter, let the rolls rise again until double in size, then bake them in a moderate oven until crisp and brown.
