HOUSEHOLD HINTS.

When soaking salt fish before cooking, add a little vinegar to the water; it improves the fish. Hay water is a great sweetener of tin, wooden, and iron ware. In Irish dairies everything used for milk is scalded with hay water. Boil a handful of sweet hay in water and put in the vessel when hot. Don't waste your time scouring your breadpans; bread never bakes as well in a bright tin. Indeed the best breadpans --if one can afford to have them made-- are oblong ones made of Russia sheet iron. Scalloped Potatoes.--Pare potatoes and slice thin. Mince two or three onions. Put a layer of potatoes into a pudding dish, cover with fine bread crumbs, strew over a part of the minced onion, and season with bits of butter, pepper, and salt. Continue the same alternation of potatoes, crumbs, etc., until the pan is almost full, then pour over new milk until moistened, cover tightly, and bake one hour. A good supper dish for farm hands.
