Green Corn.

A good many people are prejudiced against green corn or "roasting ears," as an article of diet, believing its use to be promotive of bowel troubles. Nothing could be farther from the truth. Properly prepared and eaten, corn is a positive cure for diarrhea. Plucked when at the proper stage, well cooked and each row of grains cut through the centre before eaten, no vegetable production is more wholesome or nutritive than corn. The splitting of the grains renders it easily digestible, while at the same time freeing the starch and other elements which are very soothing to the bowels. No article of summer diet deserves to be held in higher esteem, and few are cheaper than corn, when at its very best. It is a production peculiar to the United States, and is not esteemed at its real value.
