At this time of year when almost everyone holds open house, Sandy Stronach suggests coffee for the crowd. This recipe will save you time in guessing and measuring.
COFFEE FOR THE CROWD
Put one pound coffee, regular grind, in a cheesecloth or muslin bag, which is large enough to hold at least twice that amount. Drop bag into large kettle or boiler containing two gallons of boiling water. Cover tightly. Reduce heat so that coffee does not boil and let it stand 8 to 12 minutes. Plunge bag up and down in hot water several times, then remove bag. Keep coffee hot for service. Serves 40.
Some amusing holiday superstitions: Portuguese cooks spank the effigy of their patron saint if their cooking does not turn out just so. In the American South, Negro cooks will stir any liquid mixture they are cooking only from left to right; if stirred the other way they believe it will sour. During Chinese New Year's festivities, tangerines are eaten in great quantities to ward off evil spirits.
Gus Haenschen offers this delicious menu for a holiday hostess:
HOLIDAY MENU
Clam cocktail
Home-grown chicken broiled over charcoal fire, season well and brush liberally with butter
Fresh corn on the cob baked in their husks in coal fire.
Cole slaw salad - Graham muffins
Strawberry-Macaroon Supreme
Demitasse
Then this is a favorite recipe of Haenschen:
STRAWBERRY-MACAROON SUPREME
1 large box of berries, sugared and let stand
Add half-dozen macaroons crumbled
Soak in cherry brandy for three hours
Chill and serve with a topping of whipped cream
