We have long had a high opinion of the talents and ability of the Swiss, and when our Consul General, Boyd Winchester, to that thrifty land tells us that they make cheeses there which last 200 years our respect increases. Mr. Winchester says that he has seen cheeses that date back to 1660, still sound. These ancient affairs are used as an antidote for sickness caused by too free indulgence in new cheese. They are also used somewhat after the manner of family registers and tombstones to record births, deaths, marriages, etc.
