BEHIND every point of personal
etiquette such as distinguishes
the well-bred and gentle person
is a history and a reason. The
gentleman walks on the street side
of a lady because in the Middle
Ages that procedure was necessary
to protect her from refuse thrown
to the gutters from upper windows.
and against street brawlers. as well
as for some reasons that still ob-
tain.

The etiquette of table usage is
not so many centuries old as that
of personal behavior. Some of it
revolves about foods that have been
brought into general use much
later. and of which some are still
evolving into the realm of greatest
réfinement and most various use.

Use for Each Sugar

Among the latter is sugar, or
rather, are the sugars.. Within
fairly recent times the word
"sugar" covered all sweetening
material. Now one must specify
what sort of sugar is meant,' for
about each sugar are clustered cer-
tain uses. Of these uses, which
compose sugar etiquette. each has
Its reason and its history of use
and wont.

Reasons for the use of granulated
sugar, as well as the nature of
its various uses, are familiar to
most persons. Because of its con-
venient formation, its keeping quaf.
ities, ,the ease with which it can
be handled and kept clean, it is the
sugar-of-all-work. Nothing is more
convenient for use in ordinary bak-
ing, or cooking, for sweetening
purposes in the kitchen, or for
candy making. This convenience
and the fact that all these uses
entall the presence of heat. which
quickly dissolves the crystals, dic-
tate its use.
