People eat about the same total quantity of food now as they did 30 years ago, but the composition of the dietary has changed.
Consumption of wheat and other cereals, potatoes and apples, beef, veal, and mutton has declined, says the Bureau of Agricultural Economics. But consumption of vegetables (other than potatoes), citrus fruits, sugar, poultry, eggs, milk, manufactured dairy products (especially ice cream), edible fats and oils (other than lard and butter), cocoa, chocolate, and coffee has increased.
Consumption of lamb and mutton, pork and lard, butter and sweet potatoes has varied during the last 30 years, but the general level of consumption of these foods has not changed.
