TUNA TIMBALES WITH FRENCH CHEESE SAUCE
Make 6 servings
1 cup very fine noodles
1 can tuna, drained
1/4 cup chopped celery
2 tablespoons chopped onion
2 tablespoons chopped parsley
1 tablespoon lemon juice
1 teaspoon salt
2 eggs, separated
1/2 cup milk
French Cheese Sauce
1. Cook noodles in large amount boiling salted water until tender; drain; rinse with cold water.
2. While noodles cook, flake tuna in large bowl, mix with celery, onion, parsley, lemon juice, and salt.
3. Beat egg whites until stiff but not dry; beat egg yolks slightly.
4. Mix noodles, beaten egg yolks, and milk with tuna mixture; fold in beaten egg whites.
5. Spoon into 6 well greased 6-ounce custard cups; place cups on cooky sheet.
6. Bake timbales in moderate oven (350 F.) 30 minutes, or until firm in center.
7. Loosen timbales around edges with knife; unmold on heated platter; serve with french cheese sauce and, if desired, green beans garnished with onion rings.
FRENCH CHEESE SAUCE
4 tablespoons (1/2 stick) butter or margarine
4 tablespoons flour
1 tablespoon grated onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
2 cups milk
1 cup (1/4 pound) grated process American cheese
1. Melt butter or margarine in medium-size saucepan; blend in flour, onion, salt, pepper, and nutmeg; slowly stir in milk.
2. Cook over low heat, stirring constantly, until sauce thickens and boils 1 minute.
3. Add grated cheese; continue to cook over low heat, stirring constantly, until cheese melts.
4. Serve hot over Tuna Timbales.
