Are Demanded
Higher standards of sanitation in restaurants are now being demanded by health department inspectors, Harold Elliott and Robert Pansky, according to a report submitted to the Board of Health.
It was recommended that all establishments utilize a uniform standard for sterilization of dishes and tableware. Articles must be immersed in water at a temperature of at least 170 degrees for a period of 2 minutes to be acceptable for reuse. It was also recommended that soda fountains utilize paper service entirely. This would eliminate the need for complicated equipment and replacement of dishes and is less expensive in the long run.
During the month of March there were 90 such inspections made by the department. According to Health Inspector Robert H. Pansky, a conference of food handlers and health department personnel will be held in East Hartford during the month of June. Through the cooperation of the State Department of Health a traveling laboratory will be brought to East Hartford and the public will be invited to inspect the methods that are used to determine bacterial counts on glasses and tableware. By means of this get-together, said Mr. Pansky, we expect to acquaint food handlers and the public with the proper technique of sterilization and serving food in a sanitary manner.
